The Altemasi style has its roots in Trentino’s highest hills, between 450 and 750 metres above sea level, where Chardonnay and Pinot Noir grapes from the best-suited vineyards ripen.
At these altitudes, the grapes are subject to strong fluctuations in temperature, which determine their profile of aromas and help maintain a high level of acidity, factors that are essential to allowing long periods of maturation on the lees.
Grapes grown in the mountains, enhanced by winemaking expertise, enable Altemasi sparkling wines to develop a fresh, highly complex and elegant bouquet.

In the hills around Trento, the deep, chalky and structured soils of glacial origins give the wine “backbone”, lending the aromas elegance and minerality after ageing on the lees.

In the Valley of the Lakes we find glacial clay soils, which along with the strong fluctuations between day and night temperatures, give the wines potency and acidity. These soils provide longevity and represent the sparkling wine’s “backbone”.

Valle di Cembra

The Cembra Valley with its sandy-textured glacial soils and Alpine climate imparts crispness and intense aromas to the sparkling wine, along with high acidity, which renders the palate bold and “characterful”, as well as contributing to its longevity.

Altopiano di Brentonico

The Brentonico Plateau is composed of deep, alkaline basalt soils, which give the sparkling wine depth and “substance”: they provide “muscle”, i.e. potency and longevity, bringing austerity to the aromas and minerality and volume to the palate.

The Altemasi Winery, inaugurated in 1994, is a highly technological, extremely functional facility where the entire line of prestigious Metodo Classico Trentodoc sparkling wines is produced based on Cavit’s consolidated experience and its tradition in sparkling wine production.

PICA

PICA (Piattaforma Integrata Cartografica Agriviticola – Agricultural and Wine-Producing Cartographic Platform) is the most advanced digital platform in Italy for the implementation of smart, environmentally sustainable winegrowing.
It was inaugurated by Cavit in 2010 with the aim of ensuring optimum management and yields of crops, and steering our winegrowing members consistently towards total sustainability.
It provides an essential tool to tackle the challenges of climate change, enabling the optimisation of water usage and preserving vine health.

With the aid of PICA, strict controls and selections are carried out in the vineyard during all agronomic procedures, including the grape harvest, which is strictly manual. This synergy between technology and farming expertise guarantees consistent quality in every bottle.

When great value is placed on the land, responsibility is even greater. This is why we have been following the “Protocol for quality winemaking in Trentino” for over 20 years, implementing winegrowing that is respectful of the environment.

Cutting-edge winegrowing, as well as reduced energy consumption and the use of renewable energy sources: these are just some of the practices that we follow so that we can pass a healthy, intact environment on to future generations.
